Pumpkin Pancake Time!


So, its pumpkin pancake time.  Well what I mean is that it is time to eat them and often.  There is absolutely nothing wrong with eating these pancakes...trust!   It is officially that time when I start to get excited about Thanksgiving and the holiday season in general, about stuffing myself with all of the things this time of year has to offer, the time of year where it starts to smell like winter.  I mean it did snow over Halloween weekend.  In all seriousness it should not have snowed in October in DC. 

So pumpkin pancake time is that time after Halloween all the way until Christmas.  I mean they are just so spicy, fluffy and pumpkiny.  Serve these with baked cinnamon apples and all I can say is amazing!  So make these.  They are a fantastic way to start the day.  They might have been the way I have started the few Christmas mornings.  P.S. up next in the world of pancakes will be ginger bread pancakes...sooo excited.




Ingredients out and ready to go.



No apples this time, but next its on!

Pumpkin Spice Pancakes: (recipe from Martha Stewart Living)
*makes 8 to 10
1 1/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/8 teaspoon nutmeg
1 pinch cloves
1 cup milk
6 tablespoons pumpkin puree
2 tablespoons unsalted butter, melted
1 large egg

1.  In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, ground ginger, salt, nutmeg and a pinch of ground cloves.

2.  In a separate bowl, whisk together milk, pumpkin puree, melted butter, and egg.

3.  Gently whisk wet ingredients into dry ingredients.

4.  Spray non-stick pan with cooking spray over medium heat.  Using a 1/4 cup measuring cup, scoop batter and pour onto preheated pan. Cook pancakes about 3 minutes per side.

5.  Serve and Enjoy!
