Sometimes you need to wake up to a special treat. Something other than pancakes or french toast...something a bit more healthy. Just a little Sunday morning treat. This caramelized banana bread oatmeal is packed with walnuts, flax seeds, raisins, a touch of brown sugar and cinnamon, with caramelized bananas to finish the oatmeal off. It is a great way to start off the day with the right amount of goodness. Well, really I just wanted another excuse to use my kitchen torch...and this seemed like just as good a time as any because I had everything in the kitchen I needed. The bananas caramelized just enhances their flavor, adding another depth of flavor to the oatmeal. This comes out delicious, is fairly quick, and is a filling, and healthy breakfast. Try it when you need a little fun and want to change things up a bit. Enjoy!
This is how my oatmeal prep looks every morning...then I added bananas...and a kitchen torch.
Yum, the brown sugar on the bananas bubbles and melts together, while the bananas brown just the right amount.
Caramelized Banana "Bread" Oatmeal:
*Serves 2
1 ripe banana
1 1/2 cups whole oats
1/2 cup raisins
1/4 cup chopped walnuts
1 1/2 teaspoons flax seeds
1/4 teaspoon cinnamon
1/2 tablespoon brown sugar, plus 2 teaspoons
1. In a medium sauce pan, bring 2 1/2 cups water to a boil. Once water is boiling, add oats and turn heat down to medium-low, stirring occasionally. Cook oats for 4-5 minutes.
2. While the oats are cooking, divide the walnuts, flax seeds and 1/2 tablespoon brown sugar evenly between two bowls.
3. Once oats have cooked, add the raisins directly to the oats while still in the pan. Leave them for about 30 seconds to a minute. This will allow the raisins to plump up. Then pour the oatmeal into bowls.
4. Top the oatmeal with cinnamon and stir to mix ingredients. Slice the banana and lay on top of mixed oatmeal. Sprinkle with remaining brown sugar and then using your kitchen torch, brown the bananas, while caramelizing them. Do this just until brown sugar is melted and banana starts to smell toasted. Serve with milk or coffee. Enjoy!
