Do you ever meet a girl and basically instantly know she is going to be fun and cool? One of those girls you can joke with and not ever be too terribly serious. Meet Molly or as the other Lauren in my office has coined her "Mols". As a native Texan, she can bake and cook, and is full of personality. We bonded over well food and clothes...she shares my mild obsession with Anthropologie and well shopping in general. So, I was very excited that she agreed to do a guest post...she even penciled it in on her calendar.
So, any who, when she walked in holding a container with these cookies at 9am, I grabbed one, took a bite and left wishing I had grabbed two...maybe three. (This was a small container, and basically I didn't want to share them with the rest of the office.) They are light, fluffy and delicious and I might have to say the perfect cookie for summer. You should definitely give these a try!

Yes… Yes I am one of those obnoxious people from TEXAS, where we think our state is the best and greatest… before you argue with me about the AWESOMENESS that is TEXAS let me remind you of one thing… FIESTA! Being from San Antonio, Fiesta was a holiday unlike any other, just as big as a Christmas, and bigger than 4th of July.
Everyone has their own vivid memories of Fiesta, mine include decorating my bike for the bike fair with so many crepe paper flowers you couldn’t see the bike anymore, and my first Margarita. Oh, oh and the smell of Mexican food filling the air, face paint, parades… As you can tell I’m slightly nostalgic and homesick for these 10 days of fun and festivities, so to console myself I headed to the kitchen… the result, Margarita cookies, a fluffy cookie with lime, hints of orange, tequila, and a dash of salt.

Sea salt and sugar...
Margarita Cookies:
*makes about 48 cookies
2½ cups all-purpose flour
¾ teaspoon salt
½ teaspoon baking soda
1cup sugar
1cup butter
1 large egg
2 teaspoons tequila
2 tablespoons lime & orange juice
(I used 1½ lime (zest and juice) and just a pinch of orange zest and a squeeze of juice)
For the Glaze: (double for more glaze and better cookies)
1cup powder sugar
½ teaspoon cream of tartar (optional)
2 tablespoons lime & orange juice (same as above)
(I used 1½ lime (zest and juice) and just a pinch of orange zest and a squeeze of juice)
1tablespoon tequila
1. To start preheat oven to 350 degrees F. Then zest and juice your limes and orange, you can zest and juice in the same bowl…
2. Add the tequila to your lime/orange mix…
3. Then in a medium sized bowl, mix together your dry ingredients…flour, salt and baking soda.
4. In a large mixing bowl, cream together butter and sugar until light and fluffy and add the egg…
5. After you mix in the egg, add the lime and orange juices and zests, then the tequila…Next whisk in the dry ingredients until combined.
6. Spoon out dough on to cookie sheet 1 1/2 inches apart and bake for 7-9. Do not over bake!…(if cookies are spreading out to thinly, refrigerate dough for 30 minutes)
7. While they are cooling make the glaze… zest and juice your limes and oranges, like you did for the cookies, measure out your powder sugar and cream of tartar in a bowl, add the lime and orange juices and zests, whisk, then add the tequila… whisk until it reaches a smooth consistency…(add more powder sugar for thicker glaze and vice versa)
8. Take the sea salt and sugar and crush them, I used a rolling pin, but if you have a mortar and pestle that will work much better…
9. After the cookies have cooled, glaze the cookies and sprinkle with salt and sugar(optional)…And enjoy! (PS the more glaze, the better the cookie.)
