Oatmeal Cookie Pancakes...the perfect way to start a weekend in Birmingham


So last weekend was perfect...


Well minus the waiting on the run way for an hour and my flight being minutes away from being canceled.  But, I made it!


What do you to celebrate making it to Birmingham?  You go have dinner at a yummy french restaurant and of course cocktails!  Then you end up staying up and talking for hours, because that's what happens when you haven't seen one of your very best friends in a couple months.  Then, you wake up in the morning and make pancakes!  Oatmeal cookies pancakes.  

These pancakes are a fantastic way to start the day.  They wake you up, make you smile with their hint of cinnamony goodness and sweet maple flavor.  They have a delicious unexpected crunch and nuttiness from the oats, but still have a nice fluff.  

So, invite a friend over and make pancakes.  Chat a while and then figure out what you want to do for the rest of your Saturday.  We made a birthday cake...browned butter vanilla cake with brown sugar cream cheese frosting...recipe coming and more Birmingham adventures!

Mix up...heat the pan and enjoy a cup of coffee.


Then into the pan...


A plate of pancakes...Meghan and I were good and didn't just dig right into this pan...
We were proper ladies and each had our own plate....

Oatmeal Cookie Pancakes:  (recipe adapted from Joy the Baker)
*makes approximately 12-15 small 5 inch pancakes
3/4 cup all-purpose flour
1/4 + 1/8 cup old fashioned oats
1 tablespoon packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
a pinch of nutmeg
1 large egg
1 cup buttermilk
1/2 tablespoon maple syrup
1/8 cup (1/2 stick) unsalted butter, melted (plus more for the griddle)


1.  In a large mixing bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg.


2.  In a small bowl, beat together the egg, buttermilk, maple syrup and melted butter.


3.  All at once add the wet ingredients to the dry ingredients and whisk together just until combined.  Set aside


4.  Allow one tablespoon butter to melt in the pan.  Then using a 1/4 cup measuring cup, scoop batter into the pan.  Heat until the bottom is browned and the top is bubbly, with the bubbles popping.  Flip and cook through, about another 2 minutes.  Make a stack and keep warm in a 250 degrees F oven or enjoy right out of the pan.  Either way...Enjoy!
