Peach Shortcake with Mama Susan's Cornbread


Memorial Day weekend was a great start to summer.  I went home, hung out with my mom, did some shopping and went to the farmers market.  I have to admit something...I love the farmers market in Greensboro.  It is just different from those in DC...everything is truly local, everyone is so friendly and you can see the same people there every week.  It is definitely a Saturday morning activity that I miss.  Plus, you know that full on summer is just around the corner when you start to see peaches at the market.  I mean its just the best.  Also, last weekend there were so many stands that had fresh beets that I just had to buy some.  Turns out beet greens make delicious pesto!

So, my mom bought a LOT of peaches from her favorite peach lady, who will sell her slightly bruised ones for super cheap.  My mom basically got 12-15 peaches for a dollar last weekend, which worked out great for me!  I then just had to decide what I was going to make with them.  I have been wanting to try Mama Susan's corn bread recipe since Rachel shared it with me for my kitchen table.  So, I added a tablespoon of sugar, whisked up so whipped cream and cut up peaches.  The cornbread came out light, fluffy and basically amazing.  It complemented the peaches and whipped cream perfectly.  This is the perfect dessert for two and you should definitely give it a try this summer!

Cornbread ingredients


Ready for the toaster oven.


Umm perfect, light and fluffy...


Whisk this up...you don't even need to pull out the mixer since it is such a small amount of heavy cream.


Mama Susan's Cornbread (slightly modified):
*perfect for two
1/4 cup butter, melted
1/4 self-rising flour
1/4 cup cornmeal
1/4 cup milk
1 tablespoon sugar
2 peaches, cubed

1.  Preheat toaster oven to 350 degrees F.  Spray a small 4" x  4" dish with non-stick cooking spray.

2.  In a small mixing bowl,  whisk all of the ingredients together just until combined.

3.  Pour in to prepared baking dish and bake for 22-25 minutes or until set in the middle and golden brown.

Whipped Cream:
1/2 cup heavy cream
1/4 cup sugar
1/4 teaspoon vanilla extract

1.  Whisk together all three ingredients in a medium sized bowl until soft peaks form.

2.  Plate and Enjoy!!!
