Well as it turns out, I am a bad international flier. I always think I might be able to sleep on the airplane, like maybe this time. I even bought one of those funny neck pillows in the airport and Tylenol PM thinking surely this will knock me out and allow me to get more than two hours of sleep, but alas no.
So, what do you do when you can't sleep...well I ate a little snack...aka the trail mix that is now going in these cookies. It is the perfect trail mix for cookies...peanuts, chocolate pieces, peanut butter chips and dried cherries. Way to go Trader Joe's...but I have to admit I took out the almonds and cashews for the cookies. The cookies are a new chocolate chip cookie base that is soft and chewy. They have a nice crunch from the peanuts, and the peanut chips are like hidden gems as they blend in with cookie dough. The cherries are a bit sweet and tart, while adding a new texture and go great with the chocolate pieces. Any who, Enjoy!
Oh yes so that flight I was on was taking me to Glasgow, Scotland for the next three weeks to visit Charles. It's like a real summer vacation...you know what I am talking about...think back to school when you would have 2 and half months off. So, over the next few weeks I will be sharing my adventures in this new city as well as baking in a new kitchen. Hopefully I can figure out the whole slightly different measurements thing and Celsius vs. Fahrenheit. But I am so excited!

Okay down to the cookies...First, lets chop up some peanuts.
My eggs that don't have to be refrigerated until you bring them home from the store...oh and they were out of vanilla extract, so lets say what's up to some vanilla beans.
In goes the trail mix...

Trail Mix Cookies: (recipe adapted from Baking Magic by Kate Shirazi
*makes approximately 1 1/2 dozen cookies
125 g/9 tablespoons butter (or 1/2 cup plus 1 tablespoon)
175 g/ 1 cup light brown sugar
1 large egg
1/2 vanilla bean pod, bean scraped out + 1 teaspoon water (or substitute with 1 teaspoon vanilla extract)
150 g/ 1 cup all-purpose "plain" flour
1/2 tsp baking powder
pinch of salt
1 cup trail mix, peanuts chopped (I used Trader Joe's "Tempting Trail Mix" sans the cashews and almonds, leaving behind the chocolate chips, peanut butter chips, peanuts and dried cherries)
1. Preheat oven to 180 degrees C or 350 degrees F.
2. In a large mixing bowl, cream together the butter and sugar. Then whisk in the egg and vanilla beans until well combined.
3. Next, gently whisk in the flour and baking powder until just combined.
4. Scoop cookie dough on to sheet so that each dough ball is approximately 1 1/2 to 2 inches apart. Bake for 12-14 minutes or until golden brown, but still a bit soft in the center. Let cool on cookie sheet for 1-2 minutes then remove to cooling rack. Enjoy!
