Best way to start a work day...Pancake-Waffle Breakfast


Warning this post is going to be one big humble brag plus some thanks...

So, I did it!  I completed my very first marathon, and it was hard.  I did not lose any toe nails, but I did get some serious blisters, like where I have never had blisters before on my feet, but it was definitely worth it, after two and half months of training.  I also could not have done it with out the support of my mom and awesome friends.  It was knowing that my mom, James and Caroline would be there at the start, the encouraging and funny text messages from friends throughout, and knowing that my mom and James would be at the finish line that kept me from stopping and walking.  Plus, I knew I would be able to completely stuff my face when I was done, which I did....for the next two days.  There were more "samoas" donuts over the weekend, plus I made the sweet potatoes cookies as gluten-free cookies.  Then I knew there would be a pancake-waffle breakfast this week at work.

It was cold to start and I was still a bit worried it was going to start raining aright when we started running.

What made this run was that the whole course was different and there were great views...check out the Capitol Building in the background.


We even ran through the 9th street tunnel...can't say I have ever run through a tunnel like this before.

Second humble brag...part of my "job" this week was getting to make a pancake-waffle breakfast for the office, since we have a full kitchen.  Although it is a lot of prep work and I have to get to work super early, I love serving people breakfast, and making pancakes and waffles is my favorite!  It reminds me of being a kid, when my mom used to make us pancakes or waffles on Saturday mornings.  I still use the same recipe she used growing up, because it seriously is my favorite pancake recipe and serve mine with plenty of toppings.  This week they included caramel cinnamon apples, strawberries and whipped toppings along with sliced bananas, plus of course real maple syrup.  The pancake breakfast mornings are one of those simple things that can make the everyday different in the office, and have sort of become a tradition around here.  So, this weekend put down the Bisquick...making from scratch pancakes is SUPER easy and they taste so much better!

These pancakes and waffles turned out fluffy and super light.  I definitely forgot to take a picture of the waffles. I use the same batter for both Belgian waffles and pancakes.  It really does work.

Favorite Pancakes (/waffles): (recipe modified from Better Homes and Gardens)
1 cup all purpose flour
1 tablespoon sugar (or 1/2 tablespoon agave nectar)
3 teaspoons baking powder
1/4 teaspoon salt
1 large egg, beaten
1 cup buttermilk
1 tablespoons canola oil

1.  Heat your waffle iron or pancake skillet over medium to medium high heat.

2.  In a large bowl, whisk together the dry ingredients.  Then in a medium mixing bowl, whisk together the wet ingredients.

3.  In one addition, add the wet ingredients into the dry and mix just until combined.  Cook the waffles according to manufacturer's instructions. About 1/2 cup of batter fits in my Belgian waffle maker.  Or make small pancakes using a 1/4 cup measuring cup.  Cook pancakes on one side until bubbles are all over and popping.  Flip and cook for another 3-4 minutes.  Serve with your choice of toppings and enjoy!
