A Salute to the South...Blueberry-Cherry Buckle or Cobbler, you decide


This might sound a little crazy, but do you ever get a little produce happy at the farmer's market or grocery store?  Like where everything, both fruits and vegetables all look delicious.  Well this totally happens to me...and did last weekend.  I left the grocery store with peaches, blueberries, cherries, peppers, onions, green beans and zucchini.  Honestly the blueberries and cherries were for a purpose.  Ever since our last to visit Charles' grandmother in Williamsburg, VA at the end of May I have wanted to make a buckle.  You may ask why, but it is a result of our Saturday morning routine at Honey's house.  Saturdays we wake, drink coffee either eat breakfast at the house or go out, but no matter what we always end up watching cooking shows on PBS.  This probably drives Charles crazy; I on the other hand absolutely love it!  Any who, last time we were there Martha (you know the one and only Martha Stewart) was making a blackberry buckle and it looked so delicious.  It was also the first time I had ever heard of a buckle...which is really a warm fruit cake made in a cast iron skillet and the fruit literally buckles over the cake.  

So, I had my fruit (blueberries and cherries)...I wanted to change things up a bit since blackberries aren't really in season anymore...and some nice evening time before Charles got home.  Well per the norm...I got a little over zealous with my fruit and my buckle turned out more of a cobbler.  The blueberries and cherries went really well together and the buckle turned cobbler has a nice thin cakey top.  Next time though I know, over fruiting a buckle leaves you with a cobbler.  Give it try, just follow the recipe for the right amount of fruit or don't either way you end up with something delicious.  Enjoy!

A few more picks from my week in South:

Our third city on our tour of the South was Bluffton, SC...more specifically the Inn at Palmetto Bluff a Montage Resort.  Lets just say Charles and I didn't want to leave there and would go back in a heart beat.  We got there and decided a nice bike ride on beach cruises to check out the property was totally necessary.  Then to cool off drinks by the pool!


Okay admission, I got lucky with this picture.  I got up to work out before a breakfast meeting, because lets be real a Southern adventure involves lots of yummy pretty bad for you food.  As I was heading to the gym though, I had to stop the bike and wait out this sunrise, so I could catch just the first morning sun over the tree tops.
  

Our fourth city was Savannah, GA.  We probably would have seen more of this city, but our first afternoon involved watching the USA World Cup Soccer game at a bar on River Street.  The next morning though was a steamy, no breeze run on the abandoned River Street.  Its so different in the early morning hours before the sidewalks are packed with tourists.


Our fifth and final stop was Pawleys island to hangout with my family.  Not even a hurricane could ruin the sunset before the 4th of July.  


Oh and on the 4th there is a great 4th of July parade...yes this guy is "surfing" down the road during the parade.  I wouldn't give up the 3"ish" days I got to spend with family for anything...even though it did involve three children under the age of six and four dogs.

Okay down to this buckle.  Charles said I was cheating with these pictures, because I took them outside and of course did not bake the buckle outside.  Let's be real though, taking pictures in my kitchen yields bad blog photos.  Plus, the summer months mean I can still make good use of the daylight after work. 


So taken outside on our little porch table...blueberries and cherries.


Fruit rinsed with the cherries halved and pitted.  If you had a cherry pitter you would not need to halve them or worry about cutting your finger like I was.


Break them up a bit with a masher or fork or if you are lazy like me the tip of your whisk.


Then mix in just a little sugar...I only added about an eighth of a cup since I was using sweet cherries.


Time for the batter.


First pour the batter into the skillet and then add the fruit to the middle.


Blueberry-Cherry Buckle or Cobbler:  (Recipe adapted from Martha Stewart)
1/2 cup (1 stick) unsalted butter
2 cups fresh blueberries
2 cups fresh blackberries
1/8 cup sugar
1 cup all-purpose flour
2 teaspoons baking powder
Pinch of fine sea salt
1 cup sugar
1 cup whole milk (or skim milk)
1 teaspoon pure vanilla extract
1 teaspoon sanding sugar
Creme fraiche, whipped cream, or ice cream, for serving

1.  Preheat oven to 350 degrees.

2.  Melt butter in a 10-inch enameled cast-iron skillet over medium heat.

3.  Meanwhile, place blueberries and cherries in a large bowl. Using a potato masher or a fork, mash blueberries and cherries to release their juices.  If blueberries are tart, sprinkle with sugar 1/8 cup sugar.

4.  In another large bowl, whisk together flour, baking powder, and salt.  Add sugar, milk, and vanilla extract; mix until well combined.  Add melted butter to flour mixture; stir to combine.  Pour mixture into skillet and add blueberries and cherries with their juices into the center.  Sprinkle with sugar.

5.  Transfer skillet to oven and bake until top is golden brown and a cake tester inserted into the batter comes out clean, about 1 hour.  (If you added too much fruit like me the tester will never come out clean.)  Serve warm or at room temperature with whipped cream, or ice cream.  Best served within 1-2 days of baking.  Store in the refrigerator once the buckle has come to room temperature if you are not serving it all right away.
